Simple Choc Chip Loaf | Recipe

Sundays are for baking and this recipe that I whipped up is maybe just one of my faves! What's better than bread?! Oh yeah that's right, chocolate chips in bread! Sunday's are for Roast dinners and that's exactly what were having tonight so I said I'd bring the desert and I thought this would be the perfect thing to bring!

This is basically a flat loaf, filled with chocolate chunks and covered in glistening sugar - so if you're on any sort of diet, I'd maybe pass on this but if you're not then way-hey! This is super simple to make and all you need is:

2 Large Eggs
150g of unsalted Butter
120ml of Milk
1/2 teaspoon of Salt
2 teaspoons of Baking Powder
2 teaspoons of Vanilla extract
250g of Plain Flour
75g of caster sugar
100g of Chocolate chips or chunks of your choice

Set your oven to 180 fan and prepare your tin, whatever shaped tin you would like to use but I used on at 13in x 7in.

Mix together all your dry ingredients, flour, sugar, baking powder and salt.

In a separate bowl crack in your eggs, stir in your vanilla then add to your dry mixture. Cube up your butter and rub it in to your dough making sure everything is mixed well then chuck in your chocolate. Add in your milk a bit at a time, you don't want your dough to be too wet so this part is completely up to you but I used about 120ml of milk.

Turn out your dough onto a floured surface and knead for a couple of minutes again just making sure that everything is mixed in well. Throw in a couple of extra chocolate chips if you're feeling crazy!

Turn your dough into your tin and make sure that it's as even as you can get it. Brush the top of your loaf with milk and then sprinkle on some caster sugar. Cook away in the oven for 25 minutes but keep an eye on it as the top is likely to burn, if this happens just cover your loaf with some tin foil then return it to the oven. After the time is up and your house is smelling amazing take it out of the oven and let it cool in the tin or if you're serving it straight away, serve it up while the chocolate chips are still melting away. I recommend that you serve this up with some custard, vanilla ice cream or just another bloody slice!

There we have it, you can easily adapt this recipe to your desires too, add in some slices of banana or even add an icing glaze! Enjoy!
